CHARACTERISTICS Aspetto: clear or cloudy if unfiltered; Colour: light green with golden reflections; Aroma: typical fruity of the Italian blend; Flavour: pleasant, with a strong bitter and spicy sensation; Acidity: below 0,5% (Law limit 0,8%); Use: for dressing or cooking. PRODUCTION PROCESS Cleaning: stripping olive leaves and washing in clear water; Pressing: mechanical crusher; Kneading: by cold pressing (T<27°C); Extraction: by Centrifugation; Quality control: Laboratory analysis and organoleptic evaluation; Storage: in stainless steel tanks at room temperature. Bottling: according to HACCP; STORAGE INSTRUCTIONS Store closed in a cool dry place away from heat source and direct sunlight. This is exclusively a natural product; at low temperatures precipitation may occur. This does not affect the quality of the product, which gets clear again if exposed at room temperature.
